- 2 tablespoons chopped fresh Italian parsley
- 1 tablespoon chopped fresh basil
- ¼ teaspoon freshly grated nutmeg, optional
- ¼ teaspoon fine sea salt
- Freshly ground black pepper, to taste
For the Chicken
- 4 large boneless, skinless chicken breasts
- 1 teaspoon fine sea salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon dried Italian seasoning
- 2 tablespoons extra-virgin olive oil
- ½ cup low-sodium chicken stock
- 1 tablespoon unsalted butter
- Cherry tomatoes and fresh basil, optional for serving
Preparation
- Heat the oven. Preheat the oven to 375°F / 190°C. Lightly oil a baking dish or have an oven-safe skillet ready.
- Mix the filling. Combine the ricotta, spinach, Parmigiano-Reggiano, garlic, parsley, basil, nutmeg if using, salt, and pepper. Mix until evenly combined.
- Cut the pockets. Pat the chicken dry. Using a sharp knife, cut a deep pocket horizontally into the thick side of each breast without slicing all the way through.
- Stuff the chicken. Divide the ricotta-spinach mixture among the four pockets. Close each breast gently and secure with toothpicks if needed. Season the outside with salt, pepper, and Italian seasoning.
- Sear until golden. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3 to 4 minutes on the first side and 2 to 3 minutes on the second, until nicely browned.
- Add moisture. Pour the chicken stock around, not directly over, the stuffed breasts. Add the butter to the pan and spoon a little of the pan liquid over the chicken.
- Roast through. Transfer the skillet to the oven and roast for 18 to 22 minutes, or until the thickest part of the chicken reaches 165°F / 74°C.
- Rest and serve. Rest the chicken for 5 minutes before removing toothpicks and slicing. Spoon the light pan juices over the top and serve with cherry tomatoes, basil, or sautéed spinach if desired.

If using cooked or frozen spinach, squeeze it very dry before mixing with ricotta. Excess water can make the filling loose.
