The Story Behind the Dish

A Piccata-Style Italian-American Classic

Piccata describes a style of preparing thin slices of meat quickly in a pan and finishing them with a bright sauce. In Italian-American kitchens, chicken piccata became a familiar favorite built around lemon, butter, and pan juices. This variation adds mushrooms and spinach for a fuller one-pan supper while intentionally omitting capers.

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts, sliced horizontally into 8 thin cutlets
  • ¾ teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup all-purpose flour, for light dredging
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter

For the Lemon-Mushroom Sauce

  • 8 ounces / 225 g cremini or button mushrooms, sliced
  • 2 cloves garlic, finely minced
  • ½ cup dry white wine or additional low-sodium chicken stock
  • ¾ cup low-sodium chicken stock
  • ⅓ cup fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons cold unsalted butter, cut into pieces
  • 4 packed cups fresh baby spinach
  • 2 tablespoons chopped fresh Italian parsley
  • Lemon slices or wedges, for serving

Preparation

  1. Prepare the chicken. Pat the cutlets dry. Season both sides with salt and pepper, then dredge lightly in flour and shake away the excess.
  2. Brown the cutlets. Heat the olive oil and 2 tablespoons butter in a wide skillet over medium-high heat. Cook the chicken in batches for about 2 to 3 minutes per side, until golden and cooked through. Transfer to a warm plate.
  3. Sauté the mushrooms. Reduce the heat to medium. Add the sliced mushrooms and cook for 5 to 6 minutes, stirring occasionally, until browned and their moisture has mostly evaporated.
  4. Build the sauce. Add the garlic and cook for 30 seconds. Pour in the wine and scrape up the browned bits from the skillet. Simmer until reduced by about half, then add the chicken stock, lemon juice, and zest.
  5. Reduce and enrich. Simmer the sauce for 4 to 5 minutes, until slightly reduced. Lower the heat and whisk in the cold butter a piece at a time until the sauce becomes glossy.
  6. Wilt the spinach. Add the spinach and toss gently for 1 to 2 minutes, just until wilted. Taste and adjust salt, pepper, or lemon as needed.
  7. Return the chicken. Nestle the chicken cutlets back into the skillet and spoon the sauce, mushrooms, and spinach over them. Warm for 1 to 2 minutes without boiling hard.
  8. Finish and serve. Sprinkle with parsley and serve immediately with lemon wedges. Spoon plenty of the lemon-butter sauce over each portion.
Cook’s Notes

Getting the Sauce and Chicken Just Right

No Capers

This version intentionally leaves capers out. The lemon, butter, mushrooms, garlic, and parsley provide all the brightness and savory contrast the dish needs.

Keep the Cutlets Thin

Evenly thin chicken cooks fast and stays tender. If needed, gently pound thicker areas to about ¼ inch.

Finish Butter Off the Boil

Lower the heat before whisking in the cold butter. A hard boil can make the sauce separate instead of staying smooth and glossy.

Brown Mushrooms Properly

Give the mushrooms room in the pan and let their moisture cook away before adding the liquid. That step creates deeper flavor.

Add Spinach Last

Spinach needs only a minute or two. Adding it near the end keeps the leaves green and prevents them from disappearing into the sauce.

Serving Ideas

Excellent with angel hair pasta, roasted potatoes, polenta, or crusty Italian bread for catching the lemon-butter sauce.
